HOW TO MAKE CUCUR CAKE



Material:

- 340 ml of water

- 150 gr brown sugar

- tsp salt

- 2 pandan leaves

- 125 gr rice flour

- 125 gr wheat flour

How to make:

1. Mix the rice flour and wheat flour, sift. Set aside.

2. Cook the water, sugar, salt, and pandan leaves until the sugar dissolves. Let it warm.

3. Pour approximately 1 cup of sugar solution into the flour, mix well. At this stage the dough is still very thick, mix on low speed for about 5 minutes or can be beaten with a wooden spoon or whisk for about 7-10 minutes until the dough is smooth and sticky.

4. Pour the remaining sugar solution into the dough. Stir until completely mixed. Leave it for at least 1 hour

5. Prepare a small frying pan with a slightly deep basin. Heat a little oil in a frying pan (approximately 3 tablespoons more), use low heat and make sure the oil is really hot when the mixture is about to be added.

6. Pour in 1 tablespoon of batter, reduce heat once the fibers start to form, and sprinkle the cake with oil until it looks puffy in the middle.

7. When the center of the beak is bulging, pierce it with a skewer or toothpick to test for doneness. Rotate the shaver briefly then lift and drain.
